Ippongi is located in a basin of a snow-rich region, surrounded by mountains whose highest peak is Reiho (Sacred Mountain) Hakusan. In spring, snowmelt seeps into the ground and filters down over the course of many years. After the natural filtration process, it springs into the sake brewery's well.
The sake is as pure as the water used: clean, moderate aroma, and extremely refreshing flavor.

Pairs well with a wide variety of dishes: crab with vinegar dressing, salt-grilled chicken skewers, karaage (Japanese fried chicken) with lemon juice, tempura (with salt), and for sushi, shime saba (cured mackerel) and shrimp. If served slightly heated, it goes well with boldly flavored dishes like oden (a type of Japanese hot pot), vegetable stir fry, and nikujaga (meat and potato stew).
