Yamada-Nishiki out-of-grade rice is polished until it reaches 8%. Even skilled farmers are unable to make Tokutei Meishu because 10% of the rice is out of equal quality, which places an economic burden on the farmers. This sake addresses this issue. The sake is colorless and transparent, as one would expect from highly polished rice, but it is a strong and unique product with a lot of charm.
