Fukumitsuya founded in 1625, is the oldest sake brewery in Kanazawa. In 2001, it became a junmai-gura, which makes its sake with only rice and water. Kagatobi Limited Prestige Edition Junmai Daiginjo is a genshu (undiluted sake) made with specially contracted and grown Yamada Nishiki sake rice.

A glass that widens at the rim is recommended in order to maximize the fragrance.
It pairs perfectly with fish dish that uses butter or cream, chicken skewers dipped in sauce, and roast beef. It's also good with dishes with pronounced dashi flavor and fragrance.
