ZAKU DAICHI

ざく だいち / Zaku Daichi

Daiginjo

A drip collector is made by carefully collecting only the drippings from a sachet hung with moromi and putting it into a bottle without applying any extra force. Yamada Nishiki with a rice polishing ratio of 40% is slowly brewed at a low temperature. This is a masterpiece that has been carefully brewed with time and effort, and has been achieved in pursuit of the ultimate.
The scent is gorgeous, with notes of jasmine and daffodils, and the subtle sweetness and fresh acidity harmonize in a high-level, elegant balance with a sense of transparency. This Daiginjo is a highly fragrant and transparent Daiginjo with the ultimate rich taste but a refreshing sharpness
